Take a whole lettuce......find the core (at the bottom of the lettuce) and smack it onto a bench quite hard to dislodge it. You should then be able to twist it out. If you bang the lettuce hard on the table top (on the core)

You can break out the core by hitting it on a table - hopefully you will be able to then pull it out. Failing this try cutting it out - watch your fingers though!
Alternatively buy Romaine Heart Lettuce (long and leafy) Then just cut the bottom off and away you go.

Wrapping in lettuce is pleasant and produces excellent dishes. Iceberg, however, is not a good choice. I would use Cos - now, for some reason, known by the American name of Romain
Hi forget the iceberg lettuce and go for the darker leafy lettuces because it's healthier and also more pliable easier to work with...I love the butter lettuces, curly, red top....or romaine...there are so many out on the market now that you could have a different one for each day of the week...Iceberg is great for tossed salads or to make a BLT but too crunchy for the wraps in my opinion....or you end up with a mess in your hands....dripping etc....good luck..see you at the produce dept! The only way you could do this is to pull off the leaves from the base one at a time....However i would think an Iceberg is to crisp a lettuce to make wraps from, i am sure it will just split. this only a guess I've never tryed it..
Cut the knob off where the roots were taken off but cut into the first centimetre of the leaves and cut right through as if you were making a circle of the base. The larger leaves will then just peel away and stay whole. I am doing something similar for dinner tonight and filling the leaves with sliced beetroot,avocado, a few prawns and a tiny squirt of mayonnaise. This as a starter. Main course is a chicken apricot and half fat Cheddar cheese bake. Also included are red and yellow peppers and a topping of wholemeal breadcrumbs.
Snap them at the root! :)
